WIAW #69: Trying New Things {What I Ate Wednesday}

So I’ve been trying to branch out and try new brands of foods I already eat every day or try a quick new side dish for a meal. My latest favorite easy dish is Skinnytaste’s Quinoa Chickpea and Avocado Salad. It’s perfect as a side dish or a topping for some greens as a quick lunch. So today’s WIAW is all about trying new things. Thanks to Jenn for the linkup.


 

Breakfast

When it comes to Greek yogurt, I have tried it all, but I recently discovered my new love – Fage 2%. It’s so creamy and thick and keeps me fuller much longer than any 0% yogurt. I’ve been trying to choose the full fat yogurt recently over its fat-free counterpart for health reasons. Plus, it tastes a hell of a lot better. In my yogurt I added some honey, sliced pineapple, and some Kashi go lean crisp. Plus some coffee on the way to work. I MUST have my coffee.

Snack 1

KIND bar

Around 11:00 I had a KIND bar at my desk. I knew I was going to get really hungry before lunch at 1:00 so I thought ahead and snacked first. Glad I did.

Lunch

Lunch was a bunch of leftovers all mixed together. Sauteed kale from Monday night’s dinner, some roasted sweet potato from meal prep, and an Amy’s veggie burger. Heated up and topped with hot sauce, it was delicious. This was my first time making sauteed kale successfully and it was delicious! I am definitely going to make more of it for dinner in the future. It was really inexpensive ($1.50 for a huge bunch of organic kale) and really easy.

A little while after lunch I had a banana and some peanut butter. A classic.

 

Dinner

After my workout for the day (5 mile run) I got down to making dinner. We had an old favorite (salmon and rice) but instead of my regular veggie side, I made some asparagus. Believe it or not, I’ve only made asparagus a few times, even though it is one of my favorite vegetables. I ended up roasting them with some olive oil, salt, and pepper.
